Cast iron is best but too heavy and cumbersome stacking always at the bottom of a few pans. I have a summer place with a new induction cooktop, so a lot of my pans came back to the gas stove. Gas is best for anything. I like the airflow with my fire on a good pan. But I am enjoying the sleek look and easy clean of the induction.

But, what I learned surprised me, as I found out that the best nonstick pan, is a good old fashioned cast iron skillet that has been properly seasoned.
Since I already had a bunch of those, I bought nothing new.
Thanks for your input, Karon. Cast iron skillets are always a good choice. But I still like a nonstick especially when I'm making eggs for breakfast. The cleanup is a snap.
