From smoothies and toasts to chia pudding, these breakfast, brunch and snack options will save you time and energy in the morning.

Recipes like my Granola & Yogurt Breakfast Popsicles and Spinach-Avocado Smoothie could become your favorite summer staples.

Quick Review for Our Substack Newcomers

But each has its own unique advantages and flavor profiles.

  1. The Microwave Plan is the most convenient, easiest plan of the three. With this plan you have very little food prep. This is my goto choice when I'm traveling and only have a microwave in the hotel room. It's also the best choice when you are in a time pinch, need a break, or just don't feel like cooking or cleaning up a big mess.

  1. The Stovetop Skillet Plan delivers the most flavor due to being able to caramelize vegetables and proteins in the skillet. Top chefs always tout caramelization as a flavor builder in their recipes. But it’s still very fast and convenient.

  1. The Instant Pot Plan delivers huge flavor and fast cooking times. Pressure cookers are innately flavor builders and are used by top chefs in leading restaurants just for that purpose.

Again, in case you are new here and missed it, we have been covering the Instant Pot Plan and the Stovetop Skillet Plan the last few weeks and I’ve shared lots of timesaving strategies and recipes for those plans.

We learned just last week that The Instant Pot Plan is very simple and straightforward.

All ingredients come together in one easy step and finish usually in about 20 to 25 minutes for most of my recipes.

You dump all the ingredients into the Instant Pot, put on the lid and press the start button. No defrosting necessary.

Basically, you set it and forget it.

And that’s how the Instant Pot is better than your plain, old-fashioned pressure cooker.

The old-fashioned pressure cooker needs a bit of baby sitting to get everything cooked right.

You have to watch the clock and keep time, and then you have to manually let out the pressure. There's a lot of things you have to know how to do correctly. You certainly can't just walk away.

But the Instant Pot is different. All these features are built in and automatic. You just push a button, walk away and relax.

The Instant Pot does all the work for you.

No baby sitting required.

If you think about it, the Instant Pot Plan is the easiest and most convenient of all.

Okay, that's enough of the review for now, let's get on to some new information.

So today, I want to announce and introduce a whole new meal plan for this course.

Drumroll please!

This new meal plan is mainly for breakfasts, brunches and snacks.

I’m calling this one The Make Ahead, Grab-and-Go Plan.

The concept is simple: you make most of these meals ahead of time and grab-and-go with them straight out of your fridge.

You can keep most of these in the fridge for up to 3 days.

And none of these recipes requires cooking or more than 15 minutes to make.

What could be easier than that?

The 21 Fun Summer Recipes

These 21 new recipes are part of The Make Ahead, Grab-and-Go Plan.

The smoothies are my favorites for a quick breakfast, but I sometimes make them at night for a healthy treat.

And you and your kids are going to love the popsicles anytime of day. They are really healthy too.

Okay then, let's dive right into the 21 fun summer recipes, shall we?

1. Granola & Yogurt Breakfast Popsicles

These fun yogurt pops studded with fresh berries make a great on-the-go breakfast for a busy morning—perfect for kids and adults alike.

Ingredients

  • 1 ¼ cups low-fat plain yogurt

  • 1 ½ cups chopped fresh berries (strawberries, blueberries, raspberries and/or blackberries)

  • 4 teaspoons pure maple syrup, divided

  • 1 teaspoon vanilla extract

  • 6 tablespoons granola, large chunks crumbled

Directions

  1. Stir yogurt, berries, 2 teaspoons maple syrup and vanilla together in a medium bowl. Divide among six 3-ounce popsicle molds. Stir granola and the remaining 2 teaspoons maple syrup together in a small bowl. Top each popsicle with 1 tablespoon of the granola mixture. Insert popsicle sticks and freeze overnight.


2. Spinach-Avocado Smoothie

This healthy green smoothie gets super creamy from the frozen banana and avocado. Make ahead (up to 1 day) and store it in the fridge until you need a veggie boost.

Ingredients

  • 1 cup nonfat plain yogurt

  • 1 cup fresh spinach

  • 1 frozen banana

  • ¼ avocado

  • 2 tablespoons water

  • 1 teaspoon honey

Directions

  • Combine yogurt, spinach, banana, avocado, water and honey in a blender. Puree until smooth.


3. No-Bake Breakfast Cookies

These no-bake breakfast cookies are the sweet start your morning needs!

Packed with oats, almond butter, chia seeds and dried blueberries, these cookies offer a hefty dose of fiber to keep you feeling full, as well as healthy fats and plant-based protein for lasting energy.

They’re easy to make and perfect for busy mornings.

Just grab-and-go for a breakfast you can feel good about!
